4 Cups water
2 Cups white rice
1/4 to 1/2 Cup fresh, chopped cilantro
3-4 Tbsp butter
1 to 1 1/2 Tbsp.. fresh minced garlic
4-5 tsp. chicken bouillon
juice of 1 fresh lime
Saute rice in butter with garlic, cilantro, bouillon and lime juice over low heat until rice just begins to brown. Stir in water; reduce heat, cover and simmer until rice is tender. Makes 6 cups. Great served with fajitas and burritos.
