1/4 C chopped onion
2 Tbs Chopped green pepper
2 Tbs vegetable oil
2 C cooked rice
2 Tbs soy sauce
3 eggs beaten
Any of the following:
Mushrooms
Water chestnuts or celery
Diced ham
green peas
shredded carrots
In large skillet cook and stir onion and green pepper in oil till tender. Stir in rice, soy sauce and remaining ingredients except eggs. Cook over low heat stirring frequently. Stir in beaten eggs, cook and stir an additional 2-3 min.
