2 Cups packed brown sugar
2 eggs
1 tsp vanilla
1 c butter (I use 1/2 C butter, 1/2 C Coconut oil)
1 3/4 C flour (any kind)I use the 4 grain mix found in the bread section of this site.
1 tsp baking soda
1/2 tsp salt
3 c quick oats or if using rolled oats blend in blender before adding.
1 C chocolate chips
1 C coconut
1/2 C chopped walnuts
Cream the brown sugar, butter, eggs and vanilla in a Bosch. Switch to the dough hook and blend in the flour, baking soda, and salt. Stir in the rolled oats, chocolate chips, coconut and nuts. Then drop by spoonfuls onto greased baking sheets. Bake at 350 for 8-10 min or until done. For some reason it takes mine about 14 min.
