1/2 cup Butter, softened
3/4 cup brown sugar
1 egg
1/2 cup sour cream
1/2 tsp. vanilla
1 cup whole wheat pastry flour
1/2 tsp baking powder
pinch of salt
1/2 cup blueberries (frozen is fine)
Topping (optional)
1/4 cup brown sugar
1/2 tsp ground cinnamon
1/4 cup chopped pecans
Heat oven to 350
Cream together butter and sugar. Add egg, sour cream and vanilla. Combine the flour, baking powder and salt. Stir into batter until just blended. Fold in blueberries. Drop batter into prepared muffin tins, top with brown sugar mixture and bake for 20-25 min until done. Makes 8 large or 12 small muffins.
