8 Cups rolled oats
1 1/2 C coconut
1 1/2 C sliced almonds
3/4 C brown sugar
1/2 tsp cinnamon
2 tsp vanilla
3/4 C honey
3/4 C canola oil
1 tsp salt
Mix first 5 dry ingredients together in a large bowl. In a microwave safe bowl combine the honey, oil and salt. Bring to a boil in microwave about 3 min. Add vanilla and then pour over oats and stir. Spread into large greased cookie sheet. Bake at 350 for 20 min and then stir. Bake again for 10 min and stir, bake once more for about 8 min and stir. I bake for a total of about 38 min. Granola should be baked until evenly browned and no longer wet. Press granola down with spatula when finished baking. Cool in pan and then store in airtight container.
