Garlic Mashers

5 lbs Yukon gold potatoes w/skin
2 cubes butter
1c sour cream
Salt
10 large cloves garlic
Parmesan cheese
Asiago cheese

Boil potatoes. Mix all together. Sprinkle with cheese and bake at 375 for 15-20 min.

Gravy

2 cups broth from meat
1/4 C flour
1/4 C cold water
salt
pepper

Drain broth from meat into a pan. Mix flour and water to form a thick paste. Bring to boil, season with salt and pepper.

Boston Baked Beans

1 large can pork and beans
1 lb bacon diced
1 diced green pepper
1 large diced onion
1 Tbs worcestershire sauce
1/2 c brown sugar
1/2 c ketchup

Brown onion, pepper and beans; drain. Mix all ingredients and Bake 1 hr at 325 uncovered.

Fried Rice

1/4 C chopped onion
2 Tbs Chopped green pepper
2 Tbs vegetable oil
2 C cooked rice
2 Tbs soy sauce
3 eggs beaten

Any of the following:
Mushrooms
Water chestnuts or celery
Diced ham
green peas
shredded carrots

In large skillet cook and stir onion and green pepper in oil till tender. Stir in rice, soy sauce and remaining ingredients except eggs. Cook over low heat stirring frequently. Stir in beaten eggs, cook and stir an additional 2-3 min.

Heather's Vegetables

2 Regular potatoes
2 Sweet potatoes
2 large carrots
1/2 large Red onion
3 cloves fresh Garlic
1/2 lb Green beans
1/2 tsp dried rosemary
salt
pepper
3 Tbs olive oil

Cut vegetables up and mix together in a bowl; add olive oil, salt and pepper. Spread into greased baking pan. Roast in oven at 450 for 20-25 min. Turn temp. down to 375 and cook until potatoes are tender, about 15 more min.

Almost "Cafe' Rio" Lime Rice

4 Cups water
2 Cups white rice
1/4 to 1/2 Cup fresh, chopped cilantro
3-4 Tbsp butter
1 to 1 1/2 Tbsp.. fresh minced garlic
4-5 tsp. chicken bouillon
juice of 1 fresh lime

Saute rice in butter with garlic, cilantro, bouillon and lime juice over low heat until rice just begins to brown. Stir in water; reduce heat, cover and simmer until rice is tender. Makes 6 cups. Great served with fajitas and burritos.

Green beans

1/3 C minced onion or 1 Tbs dry
2 Tbs butter
2 Tbs flour
1 tsp salt
1/4 tsp pepper
1 C Sour cream
2 or 3 Cans of beans
1/2 C grated cheese

Saute onion in butter. Mix in flour salt and pepper. Add 1 Cup sour cream, heat and add beans (drained) Top with cheddar cheese. Mix cornflakes with 1 Tbs melted butter. Put in oven and bake at 350 for 20 min

Cheesy Potatoes

1/2 C Butter
1 lb hash browns
1/2 C minced onion or 1 tsp dry
2 C cheddar cheese shredded
2 C sour cream
1 Can cream of mushroom soup

Mix together and spread in pan bake at 350 for 1/2 hour
