Chicken Broth
1 Whole Chicken
2 Stocks celery
1 large onion
3 large Carrots
2 Tbs Chicken Boullion
2 tsp Celery salt
2 tsp lowers seasoning salt
Fresh ground pepper
Salt
Bay leafs
Place first 4 ingredients in crock pot. Fill half full with water. Mix seasonings into 3 Cups water and add to crock pot. Cook on low for 6-8 hrs.
When Chicken is done take it out, pull off all the meat, cut up and store in fridge. Strain broth and place back in crock pot with bones from chicken. Cook for 1 hr and then throw bones away and put broth in fridge over night. Next day warm broth, add vegetables, cook for 45 min. Add 3 handfuls of noodles, Add chicken and seasonings.

Gingers Hamburger
1 lb hamburger
1/2 onion
3 Cans tomato juice
2 Cans cream of celery
1 can water
1/2 tsp. garlic salt
1/4 tsp. pepper
1 bay leaf
1 bag shredded carrots
2 cups hash browns
Brown hamburger and onion and mix in remaining ingredients. Simmer 1 hr.
1/2 onion

1/2 tsp. garlic salt
1/4 tsp. pepper
1 bay leaf
1 bag shredded carrots
2 cups hash browns

Tuscan Tomato Soup
3 Tablespoons olive oil
2 large onions diced
5 Cups diced seeded tomatoes (may use canned)
3 cups chicken stock
1 jar roasted red peppers
1 1/2 cups whipping cream
1 C basil pesto
salt and pepper to taste
1 pkg. cooked tortellini cooked
Heat oil. Add onions, cook until translucent. Add tomatoes and allow to warm and simmer. Add chicken stock and red peppers simmer about 15-20 min. Add whipping cream and pesto and blend to desired consistency in food processor. Return to pot and add tortellini. Salt and pepper to taste.

Tortalinni Soup
4 14 oz Cans tomatoes
2 C beef broth
2 Tbs fresh basil or 1 tsp dry
1/2 tsp pepper
1 Zucchini half sliced thinly
3/4 lb fresh green beans or 1 can
3/4 lb Italian sausage
fresh tortellini
1 tsp minced garlic
3/4 tsp oregano
Add all ing. Simmer together, add tortellini, cook 15 min. Sprinkle with parmesan cheese.

2 C diced Potatoes
3/4 C Butter
1/2 C flour
Pepper
1 1/2 tsp. Salt
1/2 tsp. Sugar
1 Pint Half and Half
1 Pint Milk
1/2 C Cheese
Saute onion and celery until brown, add Chicken broth, salt, pepper and potatoes. Cover and bring to a boil. Reduce heat, cook vegetables till tender. Make a white sauce with remaining ing. Bring to a boil and then add to vegetables.

Squash Soup

1 medium butternut squash peeled and cut up (about 4 cups)
2 Carrots, peeled and cut into 2 inch pieces
1-2 small parsnips, peeled and cut up (optional)
1 apple peeled and cut into wedges
2 14 oz Cans reduced sodium chicken broth
1 1/2 tsp curry powder (spicy, I just use a pinch)
1/2 tsp. Salt
In large saucepan combine squash, carrots, parsnips and apple. Stir in broth, curry and salt. Bring to boil, reduce heat. Simmer, covered for 20 min or until vegetables are tender. Cool slightly. Ladle soup into blender of food processor, mix until smooth. Serve with small spoonful of brown sugar on top.

1 lb boneless chicken, cooked and shredded
1 15oz Can crushed tomatoes
1 can enchilada sauce
1 med onion, chopped
1 4 oz Can chopped green chilies
2 Cloves garlic, minced
2 C water
1 14.5 oz can chicken broth
1 15 oz can whole kernel corn
1 Can black beans
1 tsp cumin
1 tsp chili powder
1/4 tsp crushed bay leaves
1 Tablespoon dried chopped cilantro
Combine all ingredients. in greased crock pot. Cover and cook on low heat 6-8 hrs or high heat 3-4 hours.
Serve with tortilla chips and garnish with pepper jack cheese and guacamole.
1/2 C dried minced onion can be substituted
I have made this with chicken bolion cubes and the organic chicken broth from costco. For some reason it just turns out better with the bolion cubes.
Serves 8-10
