Chicken Tortilla Soup

1 lb boneless chicken, cooked and shredded
1 15oz Can crushed tomatoes
1 can enchilada sauce
1 med onion, chopped
1 4 oz Can chopped green chilies
2 Cloves garlic, minced
2 C water
1 14.5 oz can chicken broth
1 15 oz can whole kernel corn
1 Can black beans
1 tsp cumin
1 tsp chili powder
1/4 tsp crushed bay leaves
1 Tablespoon dried chopped cilantro

Combine all ingredients. in greased crock pot. Cover and cook on low heat 6-8 hrs or high heat 3-4 hours.

Serve with tortilla chips and garnish with pepper jack cheese and guacamole.

1/2 C dried minced onion can be substituted

I have made this with chicken bolion cubes and the organic chicken broth from costco. For some reason it just turns out better with the bolion cubes.

Serves 8-10
