Tiff's Enchiladas

4 Chicken Breasts
1-2 pkg taco seasoning
16oz sour cream
1 Can cream of celery soup
10-12 tortillas
12 oz Mexican cheese
1/2 cup green onions
1 small can green chilies
1 can Rotel tomatoes, chilies, lime, cilantro
1 can green enchilada sauce
Olive oil
Lime juice
Garlic salt

Place Chicken in greased crock pot cover with water mixed with taco seasoning. Cook all day on low. Shred chicken. Mix sour cream and soup and set aside. At to frying pan olive oil, lime juice, chicken, chilies, onion, Rotel. Stir together and heat through. Warm tortillas add sour cream mixture, chicken, and cheese. Roll up and put in 9x13. Pour enchilada sauce on top and cheese. Cover and bake for 35 min.

Curry Hawaiian Haystacks

6 tablespoons butter
6 tablespoons flour
2 teaspoons curry
1 tablespoon lemon juice
2 teaspoons sugar
2 cups chicken broth
¼ teaspoon ginger
2 cups milk
1 teaspoon salt
2 chicken breasts cooked & diced
Melt butter and combine all the spices, cook for 2 minutes until aromatic. Take off the heat and add the flour then put back on the heat and add broth and milk until it thickens. Add the chicken after the gravy is made. Make 3 cups of long grain rice for this amount of gravy. Serve by placing a cup of rice on a plate covered by curry sauce and topped with your favorites. Salt to taste.
Ideas: cheese, green onions, shredded carrots, Chinese noodles, frozen peas, pineapple, mandarin oranges, coconut, or edamame.

Fish Tacos

Halibut (or other flaky whitefish)
2 Tbs Canola oil
1 Tbs fresh lime juice
1/2 tsp chili powder
tortillas
sauce (recipe below)
1 Cup shredded cabbage
pico de gio (recipe below)
sour cream

Heat grill, whisk together oil, lime juice, and chili powder together. Brush onto both sides of fish, season with salt and pepper. Grill about 4 min on each side or until cooked through. Warm tortillas, fill with strips of fish, drizzle with sauce and top with pico de gallo, shredded cabbage and sour cream.

Pico de gio
5 roma Tomatoes
½ white or yellow Onion
3 whole Jalapeno Peppers
Cilantro
Lime Juice
Salt To Taste

Chop jalapenos, tomatoes and onions into a very small dice. (Leave seeds in your jalapenos for a hotter pico). Chop up a nice-sized bunch of cilantro. Place all of these ingredients together in a bowl and mix.
Squeeze the juice of half of one lime into the bowl. Add salt to taste and stir again.

Sauce
Combine in a blender:
1 1/2 cup Mayo
1 clove garlic
3/4 bunch of cilantro (no stems)
2 tablespoons water
2 tablespoons white vinegar
1/4 teaspoon pepper
1/2 tsp salt
1 jalapeno (deseeded)

Lettuce Wraps

16 Boston Bibb or butter lettuce leaves
1 pound lean ground beef
1 Tbs cooking oil
1 large onion, chopped
2 cloves fresh garlic, minced
1 Tbs soy sauce
1/4 C hoisin sauce
2 tsp minced pickled ginger
1 Tbs rice wine vinegar
Asian chile pepper sauce
(optional)
1 8oz can water chestnuts drained and finely chopped
2 tsp asian (dark) sesame oil

Rinse whole lettuce leaves and pat dry, being carful not to tear them. Set aside. In a med skillet over high heat, brown beef in 1 tbs oil stirring often and reducing heat to med if nessesary. Drain, and set aside to cool. Cook the onion in the same pan, stirring frequently. Add the garlic, soy sauce, hoisin sauce, ginger, vinegar, and chile pepper sauce to the onions and stir. Stir in chopped water chestnuts, green onion and sesame oil and continue cooking until the onions just begin to wilt, about 2 min.

Arrange lettuce or leaves around outer edge of a large serving platter and pile meat mixture in the center. To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Wrap lettuce around meat like a burrito, and enjoy!

Crock Pot French Dip Sandwiches

2-3 lb.rump roast
2 Cans (14 1/2oz) beef consomme'
4-6 kaiser or hoggie buns

Place roast in large slowcooker.
Pour consommé over. Cover and cook on low 8-10 hours or high 5-7 hrs. Shread roast, melt pepper Jack cheese on buns. Fry onions, green and red pepper strips to go on as well. Dip in au jus.

Tiff's Parmesan Chicken

3 Chicken breasts
1/4 C butter
1/2 C flour
2 Tbs lemon juice
salt and pepper
1 C whipping cream
1/2 C parmasan cheese
paprika

Cut chicken into strips. Melt butter, dip chicken in butter and then flour. Lay strips in pan and sprinkle with lemon juice. Pour whipping cream over chicken. Season with salt, pepper and paprika. Sprinkle with parmasen cheese. Bake for 20 min at 400.

Chicken Broccoli Crepes

2 Tbs butter
2 Tbs flour
1 C chicken broth
1 tsp worcestershire sauce
1 C grated cheddar cheese
1 C sour cream
3 C Chicken, cooked and cut into pieces
1 10 oz frozen broccoli or 2 C fresh
12 Crepes

Over medium heat melt butter in small saucepan, stir in flour and cook until bubbly. Add broth and worcesteshire sauce, cook stirring until thickened. Add 1 C cheese. Empty sour cream into med bowl, gradually add hot cheese sauce stirring constantly. Place crepes in large baking dish fill with chicken and steamed broccoli. Spoon sauce over each, fold crepes over and pour remaining sauce over all. Sprinkle with remaining cheese. Bake at 350 for 20 to 30 min.

Crepes

2 beaten eggs
1 1/2 C milk
1 C flour
1 Tbs cooking oil
1/4 tsp salt

Beat above ingredients till mixed well, cook with Crepe maker or in lightly greased hot skillet 2 Tbs at a time. Makes 18 Crepes

Pizza

Whole Wheat Pizza dough

2 1/2 C whole wheat flour
1 Tbs sugar
1 Tbs dry yeast
1/2 tsp salt
1 C comfortably hot water 120-130 degrees
2 Tbs grape seed oil
1/4 C flax seeds, ground

Mix 2 Cups flour and salt in medium bowl. In small bowl mix sugar and water, sprinkle yeast over water and let sit a few minutes. Add yeast mixture to flour along w/ oil. Mix well. Add remaining flour as needed to make a soft dough. Knead 5 min, let rest 5 min, roll out and placed on greased cookie sheet. Bake for 5 min before adding other ingredients.

Sauce

1/2 Tbs grape seed oil or olive oil
2 cloves garlic
1 can tomato sauce
1 Tbs Classico sun dried tomatoes
italian seasoning

Lasagna

1 lb hamburger
Tomato sauce
Mozzarella
Cottage Cheese
Lasagna noddles

Cook noodles in boiling water as directed on package. Brown hamburger,drain, add tomato sauce (Prego) and simmer on low heat. Mix together 16 oz cottage cheese with 2 C shredded mozzarella. Layer meat, noodles and cheese mixture twice. Sprinkle with parmesan cheese and cook at 350 for 30 min.

Fajitas

2 chicken breasts, cut into thin strips
1/2 onion
Peppers
Fajita seasoning mix
water

Heat skillet and cook chicken. Add sliced onion and pepper. Mix seasonings with water
and pour over top. Cook on low heat until peppers are tender. Serve inside warm tortillas. Top with fresh tomatoes, cheese and sour cream.

Tortillas

Mix
2 C flour
1/2 tsp Baking Powder
1/2 tsp Salt

Cut in 1/4 C shortening

boil 2 C water
add just enough water to above mixture to make a soft dough.
Let raise for 20 min.
Roll out paper thin.
Cook on pan about 250 degrees
